Fructose – the versatile fruit sugar
Fructose, also known as fruit sugar, is a naturally occurring simple sugar found primarily in fruit and honey.
In its pure, crystalline form, fructose is a popular sugar substitute with high sweetening power and versatility – ideal for low-calorie products, special dietary requirements, and industrial applications.
How is fructose produced?
Crystalline fructose is obtained from natural sources such as corn starch or sucrose (table sugar). The starch is enzymatically converted into fructose, or sucrose is broken down into glucose and fructose.
The result: a white, ultrapure powder with a fine crystal structure – tasteless, highly soluble, and excellently dosed.
Advantages of fructose at a glance:
- Higher sweetness than sugar – approx. 1.2–1.5 times sweeter than sucrose
- Economical dosage – less amount, same taste → fewer calories¹
- Low glycemic index – no strong fluctuations in blood sugar²
- Minimal insulin effect – suitable for diabetics²
- Kinder to teeth than household sugar³
- Stable sweetness & freshness – ideal for long shelf life
- Caramelizes quickly – perfect browning when baking
- Good moisture retention – ensures moist textures
- Versatile – from baked goods to sports nutrition
Fructose is used in many foods – for example in:
- Drink powders, flavored water & soft drinks
- Baked goods, muesli bars & cereals
- Yogurt, jams & confectionery
- Energy and sports products
- Frozen foods & frozen fruit preparations
Thanks to its functional properties, fructose is suitable also for products with special requirements – e.g. for endurance athletes or people on a sugar-reduced diet.
Technological advantages
- Flavor enhancement – highlights fruity and spicy notes
- Synergy effects – more effective in combination with other sweeteners
- Storage and temperature stability – ideal for frozen products
- Browning and aroma development – through strong Maillard reaction
- Moisture retention – improves texture and freshness, e.g. in cookies or bars
¹ Fructose has a higher sweetening power than sucrose, which means less sweetener is needed – this can help reduce the calorie content.
² Consuming foods that contain fructose instead of sucrose leads to a smaller increase in blood sugar levels.
³ Consuming foods with fructose contributes less to the formation of tooth decay than other types of sugar.
